PB&J CHIA PUDDING, serves 2 400 ml milk of your choice 70 g chia seeds ~ about 6 tbsp 1 tbsp honey or maple syrup 1/4 tsp vanilla bean powder or 1 tsp vanilla extract Thick yoghurt, optional Jam Peanut butter METHOD Mix together all the ingredients until well combined. Let sit for a few minutes. Then stir again to avoid clumping until the chia pudding starts to thicken. Place in the fridge to set for 1-2 hours or overnight. When ready to eat, stir in some yoghurt for extra nutrition and creaminess. Add your favorite jam and a dollop of peanut butter. Been such a lovely day here in London today, sunny and with a little summer wind to cool me down. Super relaxing, but that did not stop me from making a little icy treat thou. Used melon to make this bowl and as it naturally holds a lot of water, using them for smoothies does allow for a more ice-like texture. This is great on a sunny day when there are no ice lollies at hand! . For the toppings, I used fresh raspberries, normally go for frozen ones but felt it would be too cooling. A little passion fruit to break up the sweetness of the banana and melon + a little crunch from the walnuts. The desiccated coconut, just because I adore anything coconut and it looks pretty!
